- 对外源金属钡离子对大豆脂肪氧合酶的紫外光谱和荧光光谱的影响进行了测定,并考察了钡离子对脂氧酶好氧催化大豆油体系反应产率的影响。结果表明:在Ba2+离子加入量为0.75 mmol.L-1时,脂氧酶特征吸收A360从初始的0.1升高至0.4。但Ba2+离子对脂氧酶发射光谱影响甚微,在360 nmol.L-1峰值处与原始谱图比仅下降了约1.2%。在Ba2+离子加入浓度为4 mmol.L-1时,脂氧酶好氧催化豆油体系的产率从8%提高至18%,影响显著。
- Abstract:
- Lipoxygenase (LOX )can catalyze the oxidation of polyunsaturated fatty acids and their-esters containing the cis,cis-1,4-pentadiene moiety to the corresponding hydroperoxides. The effect of exogenous Ba2+on the conformation and catalytic performance of LOX on soybean oil was observed. The addition of exogenous Cu2+in LOX solvent strengthened the absorbance A360in UV spectrum from 0.1 to 0.4. Exogenous Ba2+could quench the fluorescence excitation spectra of LOX slightly (by 1.2%). When the addition concentration of Ba2+was 4 mmol.L-1, the total yield of soybean oil hydroperoxide catalyzed by LOX increased from 8% to 18%.
