- 对磷脂酶A2 改性的浓缩磷脂产物乳化稳定性、抗氧化性、润湿性及HLB 值的变化进行了研究。研究表明酶水解磷脂产物乳化稳定性有显著提高;同时具有良好的润湿性, 使脱脂奶粉润湿下沉时间达到5S , 速度提高80 倍;抗氧化性也有提高, 较原料磷脂提高35 .04 %(第8 天), 且HLB 值达到8 , 具有较好的亲水性能, 为磷脂的更广泛应用提供了理论依据。
- Abstract:
- The study on the function and characteristic of concent rated soybean phospholipid modified by enzymew as conducted. The w ettability , antioxidation and HLB value of soy bean phospholipid hy droly zed by phosphatideaseA2 is improved .The emulification stabili ty of hy droly zate standing is hig her than that of raw materialphospholipid .After hydrolyzing the soy bean phospholipid’ s antioxdation is improved , it increases near 40 percent.The wet tability is increased 80times .The HLB value of enzyme changed concent rated soybean phospholipidis 8 , increasing it s hy drophily .The study provide the theories basis for phosphalipid producing and apply ing in dif ferent fields.
