- 胰蛋白酶抑制剂是大豆中存在的一类抗营养因子,能够与胰蛋白酶特异性结合,形成稳定的共价化合物,致使胰蛋白酶活性降低甚至丧失,这一过程干扰了蛋白质的正常消化与吸收,进而削弱了大豆作为优质蛋白来源的营养价值。因此,采用适宜的加热或发酵工艺抑制胰蛋白酶抑制剂的活性,对于提升大豆及其制品的营养价值和食用安全性具有重要意义。此外,研究发现大豆中的胰蛋白酶抑制剂在临床营养学领域展现出显著的应用潜力。对其进行回收利用,不仅能够降低该物质在食品中的含量,还能深入探究其潜在的功能特性。本文系统梳理了近年来研究人员在抑制大豆制品中胰蛋白酶抑制剂活性方面所采用的方法,并归纳了关于大豆蛋白酶抑制剂的回收及其功能特性的相关研究成果,旨在为大豆及其制品中胰蛋白酶抑制剂的活性钝化及有效利用提供理论依据和实践参考,并进一步探索其潜在的应用前景。
