Abstract:
Positively charged soy protein isolate(PCSPI)was prepared via the enzymatic hydrolysis of soy protein and the enzymatic hydrolysis process was traced by HPLC, Zeta and TEM. Then the composite of the positively charged soy protein isolate and acrylic acid(AA)was prepared, further the solution behavior and microstructure of the composite were studied. The result showed that the positively charged spherical particles were obtained after the enzymatic hydrolysis of soy protein. These particles could form spherical complex particles with AA through electrostatic interaction. The size of the complex particles became smaller with the addition of initiator or by crosslinking. Such nano-particles could be potentially used in the fields of drug loading, biosensor and water treatment.
