Abstract:
The effects of EDTA on the stability and catalytic behavior of lipoxygenase(LOX) were studied in this paper The results showed that EDTA could improve the stability of LOX significantly, and it could retain high activity(80% or more) in a long time(30 days) at room temperature EDTA can greatly improve the catalytic efficiency of LOX catalyzed on linoleic acid, so that the reaction process can be reduced to 1/3 of the original But it would inhibit the catalytic activity when the substrate is soybean oil Spectral experiments show that EDTA induces only a fine tuning of the local conformation of LOX, and does not involve the change of the secondary structure or tertiary structure EDTA has great application value in preserving liquid LOX and catalytic oxidation of linoleic acid
