Abstract:
The extraction of phytosterol assisted by microwave was optimized through orthogonal experiments on the basis of single factor test by taking soybean oil as raw material.The results showed as follows:microwave temperature 40℃,microwave power 400 W,microwave time 2 min,ratio of material to liquid was 1 ∶19(g ∶mL),and under those conditions,the extraction volume could reach to 2.317 mg.g-1.The antioxidant was determined through studying the ability to scavenging hydroxyl free radicals(OH)of crude sterol which was extracted from soybean oil.The experimental results showed that,the ability of crude sterol scavenging hydroxyl free radical(OH)effect increasing with the concentration increasing,the IC50 was 16.430mg.mL-1.
