Abstract:
Soybean protein was extracted from soybean seed powder using alkali soluble and acid sinking method.The extracting conditions including the ratio of material to water,alkali-soluble pH,acid precipitation pH,temperature and alkali-soluble time were optimized by single-factor experiment and orthogonal test.Results showed the optimum condition were as follows: the ratio of solid material to water was 1∶10,acid precipitation pH was 4.5,alkali-soluble pH was 9.5,alkali-soluble time was 50 min and the alkali solution temperature was 45℃.In this case,the extraction rate of soybean protein reached 25.88%.
