Abstract:
Trypsinase was selected from six proteinases according to the angiotensin converting enzyme(ACE) inhibitory rate.Single factor experiments and orthogonal design L16(45) were adopted to investigate the effect of substrate concentration,hydrolysis time,E/S,temperature and pH value on ACE inhibitory activity of the product.The optimum trypsinase hydrolysis process for producing ACE inhibitory peptides was under 50℃,with pH 8.0,5% substrate concentration,0.08 E/S for 6 hours.After optimization,the ACE inhibitory activity reached 76.8%.
