Abstract:
A novel isoelectric point precipitation method of isolation of Glycinin acidic and basic subunit was developed.In this approach,two kinds of subunits was isolated according to the difference of isoelectric point of the subunits after disulfide bonds between acidic and basic subunits was cut off using β-mercaptoethanol.The purity of acidic and basic subunits prepared by this approach were 92.69% and 80.76%,and productive rate reached 31.40%,41.64%,repectively.So the approach we developed was a simple,efficient and cheap method for isolation of Glycinin acidic and basic subunits.
