Abstract:
The paper mainly concerned with the extraction and activities of soybean isoflavones.On the basis of single element experiments and L9(34) orthogonal experiments,the optimum extraction conditions were obtained: ethanol concentration 80%,solvent to soybean ratio 24∶1,temperature 50 ℃.Free-radical scavenging and anti-microbial activities of soybean isoflavones were analyzed,and the conclusion revealed that soybean isoflavones possessed superoxide radical and hydroxyl radical scavenging activities and suppressed the growth of Staphylococcus aureus,E.coli and Rhizopus oryzae.
