Abstract:
The study on the function and characteristic of concent rated soybean phospholipid modified by enzymew as conducted. The w ettability , antioxidation and HLB value of soy bean phospholipid hy droly zed by phosphatideaseA2 is improved .The emulification stabili ty of hy droly zate standing is hig her than that of raw materialphospholipid .After hydrolyzing the soy bean phospholipid’ s antioxdation is improved , it increases near 40 percent.The wet tability is increased 80times .The HLB value of enzyme changed concent rated soybean phospholipidis 8 , increasing it s hy drophily .The study provide the theories basis for phosphalipid producing and apply ing in dif ferent fields.
