Abstract:
The grass -bean flavor of soybean food stuff is related to lipoxygenase(Lox ).In processing , thephy sical or chemical methods are used to remove the undesirable flavo r and odo r of soy bean food stuf f , but thesemethods of ten lead to some insolubility of soybean proteins , and decrease the quality of protein .So it is necessary and urgent to select and develop mutant soybean by genetic study .Lipoxygenase lackingmutants (t riple - null o r double -null )soybean could improve nut ritional quality and functionality of soybeanproducts .There are four know n electrophoresis types of soybean seed lipoxy genase (Lox ) .The Lox isozymes havetheir ow n biochemist ry characteristic .IEF -PAGE helps us to identi ty Lox isozyme type and mutants .Wemodif ied the techniques about making gel and staining the gel fo r improving the resolution and reducing the experimentcost .The GelBond PAG sheet was replaced by no rmal glass plate .Use suitable enzyme staining solution.The tests attained remarkably result s and reduced cost .Thus , a technique fo r ident ifying Lox lackingmutants w as developed , that w as rapid and more accuracy .
