Abstract:
The proteases were added into the AOT/iso -octane reverse micelles to study the effects of the proteases onthe extractions of soybean protein and oil from soybean powder .Between 40 ℃ and 50 ℃, pretreatment of the soybeanpowder with 80 ℃, 2min water bath can increased the protein extraction rate .Contrast with no proteases added , proteasescould increase the protein extraction rate at 35 -40 ℃.At 40 ℃, the forward protein extraction ratewas 65 .5 %when 0 .2mol L-1 pH8 .0 neutrase AS1 .398 solution dissolved ;56 .8 %with no proteases but only KCl solution in reverse micelles.At 120min , the oil extraction rate of reverse micelles with AS1 .398 and Alkalase 2709 were 1 .75 % and 0 .877 % respectively lower than that with no proteases .At 60min , the oil extraction rate of reverse micelles was 94 .68 %of that with hexane extraction .It showed proteases have some actions on the protein before or after itdissolved into the waternucleus of reverse micelles , nowever ,with no signifluence on extraction .
