Abstract:
The limited hydrolysis process for soy protein isolate w ith papain w as studied .And the effect s of themain parameters including enzyme -subst rate ratio , the subst rate co ncent ration , the cysteine concent rate , thesodium isoascorbicide concentrate , the sodium sulfite concent rate and hydroly sis time , hy drolysis temperature onhydrolysis reaction were investig ated .Finally a optimum hydroly sis condition w as given in this paper .
